Grapes
The vineyards are planted in deep soil of origin shale-limestone and clay, dry the surface and water-rich in the transition to the ground. Equipped with irrigation drop by drop to control the level of water stress the vines have drive systems that offer better sun exposure and aeration of the vine, getting more balanced maturation and production of high quality grapes. All this attention, coupled with the conversion of old vines in a graduated fashion and spread over time, give practical meaning to the theory "The wine is made in the vineyard."
There's one last set of traditional varieties of which stand out in the area, the Portuguese Tinta Roriz, Touriga Nacional and Castellan and French Alicante Bouschet, Cabernet Sauvignon, Merlot and Syrah for red wines. For white wines, we have the regional Fernão Pires and the French Chardonnay and Sauvignon Blanc.
Winery
For the grapes was built in 1991, a modern winery equipped with sophisticated monitoring equipment, wine making, cooperage, filling and warehouse.
The winery has a laboratory that provides a rigorous continuous quality control of grapes and wines throughout the process.
A perfect combination of tradition, technology and know-how combined with a rigorous selection of grapes and the art of vinification our own grapes, under the supervision of an experienced technical team led by winemaker Leonel Cruz, have helped produce small-scale, great wines recognized in national and international competitions.
Terroir
The wines of Quinta do Cavalinho are the result of a terroir particularly keen to develop the culture of the vine with a unique combination of soil, climate and grape varieties reflecting the true essence of the harmony of nature with the vineyard. The flowering of the vines in their natural environment with minimal artificial intervention provides the ability for our wines to express their origin "terroir in a bottle" and across borders to defend the identity of Portuguese wine.
